Mini Cheese Cakes
1 package of cream cheese
1 cup vanilla wafers
1 1/2 teaspoon vanilla extract
1/3 cup sugar
3 Tablespoons melted butter
2 teaspoon lemon juice
Combine crumbs and butter. Press onto bottom of paper
Combine next five ingredients and beat until smooth.
Spoon into muffin cups and bake @ 375 degrees for 12 ~ 15 minutes ~ until set.

Chill for two hours
