Cheddar Thumbprint Cookies
with Hot Pepper Jelly
1 8oz. bag of shredded sharp cheddar cheese
1 stick soft butter
1⁄4 teaspoon ground cayenne
*Crooked River Herb Farm Hot Pepper Jelly
1 1/4 cups flour
1/2 teaspoon salt
1 egg white, beaten lightly
1 1/2 cups ground walnuts
Mix first five ingredients together with hands to form a stiff dough. Chill several hours. Make balls the size of small walnuts. Dip in the egg white, then roll in nuts.
Place 1 1/2” apart on un-greased cookie sheet
Bake at 350 degrees for 7 minutes
Remove from oven, press finger in center of each cookie
Return to oven for another 7 to 9 minutes, until rich golden brown ~ Cool.
Place 1⁄2 teaspoon of Crooked River Herb Farm Pepper Jellies in each cookie
